Today’s cheese of the day for American Cheese Month: CABOT CLOTHBOUND CHEDDAR.
A cheese story:
This cheese showed up in 2003 and blew minds in cheese shops all over the country. People went insane, like Beatles British invasion style. They had never tasted anything so amazing! What is that other stuff we called cheddar before? It is dead to us! They only had so many wheels, and when the cheese sold out everyone cried and cried and cried. But then they made a bunch more. And then they dynamited out the side of a mountain so they could age like WAY more. Now we have plenty. Phew. And it still tastes just as delicious as it did the first time we tried it. Maybe better.
