Tarte Tatin

Though not much good can come of a burned custard, Stephanie Tatin proved more than 100 years ago that not all culinary accidents need be irreversible disasters. Having forgotten the crust in an already-baking apple pie tart, she hastily placed a round of pastry on top of the pan in the oven. Once the crust was golden, she flipped the pan over, serving her upside-down tart as the now famous tarte Tatin.
